Perfect Pumpkin Muffins

Can you tell we LOVE pumpkin?  Fall can seriously be all year long and we would love it!  Plus these pumpkin muffins are sugar free and SO yummy.  They go perfectly warmed up with a pat of ghee or kerrygold grassfed butter on top.  You can thank us later.

Makes six perfect muffins, 1 muffin per serving


Prep time: 20 minutes        Cook time: 20 minutes    Total time: 45 minutes


4 eggs
2/3 cup milk (whole, almond, or coconut)
1/3 cup pumpkin puree
1/4 cup coconut oil – melt before measuring
1/4 cup almond flour OR protein powder
1/4 cup coconut flour
1 tbsp pumpkin pie spice
1 tbsp vanilla extract
1/2 tsp salt
1/4 tsp baking powder



  1. Preheat oven to 400 degrees
  2. Grease 6 muffin tins or line with muffin cups
  3. Whisk eggs, coconut oil , pumpkin, vanilla and milk in a small bowl
  4. In a medium bowl, mix almond & coconut flour, salt, pumpkin pie spice and baking powder.
  5. Add the wet mixture to the flour mixture and stir until well mixed and not lumpy
  6. Fill the muffin tins 3/4 of the way using a small spoon
  7. Bake approximately 15-20 minutes or until golden brown
